Santa's Sushi

Tight on funds this holiday season but still want to give some Christmas cheer?! Believe me, I have been there! But don’t fret. Today I am sharing with you 2 holiday DIYs, together they make the perfect holiday gift that is easy on your wallet and great bang for your buck. They are perfect for coworkers, your hair stylist, or even your mail carrier. Just a little something to show them you care and appreciate them this season.

 

I am starting this out by sharing with you a recipe that takes me back to my childhood days. Growing up I played soccer and through that my family and I met lots of good friends. One family in particular always stands out in my memories. Maybe you know a family like them, those who always had a homemade treat waiting for you on their kitchen counter. The family who signed up first for any gathering offering their yummy baked goods as a dish to pass. I looked forward to their treats and this recipe comes straight from their kitchen. Santa’s Sushi makes the perfect sweet treat to box up and hand out.

 

Santa’s Sushi

Ingredients:

1 14-oz. package Kraft caramels

1 14-oz. can sweetened condensed milk

¼ c.  butter

2 bags Marshmallows

1 box Rice Krispies cereal

***For all of my GFree foodies… make sure to pick up Gluten Free Rice Krispies

 

Equipment:

Microwaveable safe dish

Rubber scrapper

Metal skewers (for dipping)

Trivet

Wax paper

PREP:

Once the caramel mixture is warmed, you will want to move quickly dipping and rolling your marshmallows… follow these simple prep steps to make sure you are ready to go when the mixture comes out of the microwave.

  • In a shallow dish, pour Rice Krispies to cover the bottom. This will get you started, add more as needed.

  • Open marshmallows and place in large bowl, easily accessible and close to the Rice Krispies.

  • Place trivet near work station, caramel mixture will be hot and need a resting place.

 

PREPARE:

  • In a microwaveable safe bowl combine caramels, sweetened condensed milk, and butter. Begin heating this mixture on high for 1 min. Stir and repeat. The mixture will take several intervals to completely combine. Do not get impatient and heat on longer intervals…. You do not want to burn the mixture.

  • Once mixture is combined, remove from microwave and place on a trivet at work station. Mixture will be very hot. Use hot mitts if necessary.

  • Using your metal skewer, poke marshmallows one at a time. Dip into caramel mixture covering the marshmallow.

  • Clink any excess caramel mixture off the marshmallow before rolling them in Rice Krispies.

  • Completely roll in Rice Krispies covering all of the caramel coating.

  • Place on wax paper to set. Once set, put into air tight container. 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

For all of you intending to gift these this season, one batch makes about 68-72 marshmallows, which will allow you to create between 17-18 gifts!
